Mint-Ting-A-Ling Cupcakes

  • 1 box of dark chocolate cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 4 cups powdered sugar


  1. Prepare cake batter according to box directions
  2. Fill cupcake liners about 1/3 full
  3. Bake 8 -12 minutes
  4. Remove ice cream from freezer to soften
  5. Place tin with cupcakes in refrigerator to cool
  6. While still in the cupcake tin, fill remainder of cupcake liner with Mint-Ting-A-Ling
  7. Press down to make sure the ice cream is packed in
  8. Place in freezer to harden for AT LEAST 1 hour
  9. In large bow cream butter and powdered sugar then beat in milk
  10. Frost cupcakes & return to freezer until ready to serve
  11. Enjoy!
