Peach Parfait PieTime: 2 hr.
- 1 pkg. lemon or orange gelatin
- 1¼ cups water
- Perry’s Vanilla Ice Cream (1 pint)
- ¼ teaspoon almond extract
- 1½ cups peaches (sweetened, if desired)
Boil water in 2-qt. Saucepan. Remove from heat. Dissolve gelatin. Add vanilla ice cream. Stir until melted and blended in. Add almond extract. Fold in sliced peaches. Chill, stirring occasionally until mixture is thickened but not set, 20 –30 minutes. Spoon into baked pie shell. Chill until firm. Top with whipped cream and additional peach slices.
