Peppermint Chocolate Cookie Ice Cream Sandwiches

Ingredients
- Large chocolate cookies
- Perry's Peppermint Stick
- Candy canes, crushed
Directions
- Line a cookie tray with foil and place into a freezer for 5 minutes
- Place a scoop of ice cream on one cookie, press with another, use spatula to even out the sides
- Roll the sides of the cookies in crushed candy canes
- Place the cookies on the cookie sheet and freeze until ready to serve
