4th of July Ice Cream Cake

  • 1.5 qt of Perry’s Ice Cream - Vanilla
  • 1 pt of blueberries
  • 1 pt of raspberries or strawberries
  • 3 tablespoons unsalted butter, melted
  • 3/4 cup graham cracker crumbs
  • Whipped cream (optional)
  • Caramel or chocolate sauce (optional)


  1. Preheat the oven to 350°F
  2. Stir together melted butter and graham cracker crumbs
  3. Spoon out graham cracker crumbs onto a small baking sheet and bake for 7-10 minutes
  4. Remove from oven and allow to cool completely
  5. As you are pulling the graham cracker crumbs out of the oven, take your choice of Vanilla out of the freezer to temper, so it is easy to spread into the form later
  6. Once the crumbs are cooled off, even the crumbs in the bottom of a circular pan
  7. Layer ice cream on top of the crumbs, freeze for 20-30 minutes
  8. Pull the cake out of the freezer and layer the fruit on top (we did it in the shape of a star)
  9. Return the cake to the freezer until you are ready to serve
  10. Top with whipped cream and caramel sauce when you're ready to serve (optional)
  11. Enjoy!
