Pineapple Paradise Shortcake

Ingredients

  • 6 tbsp butter (softened)
  • 1/2 cup sugar
  • 1 egg
  • 1/4 tsp almond extract
  • Pineapple slices
  • 1/2 tsp vanilla
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1.5 oz container of Perry's Ice Cream - Pineapple Paradise

Directions

  1. Mix butter and sugar in bowl until creamy
  2. Add egg, almond extract, and vanilla
  3. Whisk flour, baking powder, and salt
  4. Add to mixture and stir until combined
  5. Roll into 1" balls and place in greased mini muffin tin
  6. Indent dough with your thumb or the back of a teaspoon to make a cup
  7. Bake at 350° for about 10 minutes then cool completely
  8. Fill cups with Pineapple Paradise
  9. Top with pineapple slices
  10. Chill or serve immediately and enjoy!
