Red, White & Blue Parfait

Earlier this week we shared our new 4th of July ice cream cake recipe.  This is our second take on the Independence Day dessert: a very cool red, white & blue parfait!

Perry's Ice Cream Red, White & Blue Parfaits

Makes 4-5 parfaits

You will need:

  • 1 qt of blueberries
  • 1 qt of strawberries
  • Vanilla, All Natural Vanilla Bean, French Vanilla or All American Perry’s Ice Cream
  • whipped cream
  • star fruit for garnish (optional)
  • American Flag cocktail sticks or any other decorative sticks (optional)


  1. Wash and cut strawberries
  2. Layer strawberries on the bottom of parfait glasses
  3. Second layer – ice cream – try to add “shaves” of ice cream instead of round scoops to create a flat layer
  4. Layer blueberries next
  5. Optional: If your parfait glass height allows add another layer of ice cream followed by a layer of strawberries
  6. Place your parfaits in the freezer until you are ready to serve
  7. Pull parfaits out, add whipped cream as the top layer
  8. Optional: garnish with starfruit, strawberries and decorative cocktail sticks
