Easy Fried Ice Cream Casserole Recipe

As we approach another month of this cold, icy winter, it’s only natural to reminisce on everything the warm summer months have to offer—like going to the fair! We don’t know about you, but when we find ourselves on the fairgrounds, we’re heading straight to all the delicious food. While some indulge in turkey legs, walking tacos, or fried mac ‘n cheese, we consider ourselves dessert-first kind of people; fried ice cream comes to mind! So, if you find yourself having a case of the winter blues, put yourself in a fair state-of-mind and try this easy fried ice cream casserole recipe.

Here’s what you’ll need:

  • 3/4 cup unsalted butter
  • 3 cups Corn Flakes cereal, crushed
  • 1 tablespoon ground cinnamon
  • 1/4 cup sugar
  • 9 cups Perry’s Vanilla Ice Cream
  • 4 cups Whipped Cream
  • 1/2 cup honey
  • 12 maraschino cherries, with stem

Step 1: Prepare the coating

To get started, add the butter, cornflakes, and cinnamon to a small saucepan. Stir the cornflake mixture often, for about 6-8 minutes, or until the cornflakes are brown and crispy. Next, it’s time to sweeten things up by removing the mixture from the heat and stirring in the sugar. Then, add half the cornflakes to a 9×13 baking dish in an even layer. Now the coating is complete, and you’re ready to add the Good Stuff!

Step 2: Put the ice cream scooper to work

Now it’s time for the best ingredient: Perry’s Signature Vanilla ice cream! Grab your handy ice cream scooper and place the ice cream on top of the cornflake mixture. Then, use a knife or offset spatula to spread the ice cream evenly and top with the remaining cornflake mixture.

Pro tip: Let your ice cream rest on the counter for a bit before spooning it on. You’ll want the ice cream to be softer, maybe even a little melty, to help it spread easily.

Step 3: Freeze, top, and serve

Once all the preparation is complete, cover and freeze your fried ice cream casserole for a minimum of 4 hours. After that, you’re ready to top and serve! Cut your casserole into slices big or small (we won’t judge!) and top with whipped cream, honey, and a maraschino cherry.

And just like that, it’s as if you’re transported to a perfectly sunny and 75-degree day at the fair! While we can’t change the weather, we can do our best to make the winter a little more bearable.
