Refreshing Lemon Meringue Pie Ice Cream Bars Recipe

Only 2 months, 3 weeks, and 6 days until Summer—but who’s counting? If you find yourself dreaming of the warmer months to come (same!), this frozen twist on a classic lemon bar recipe may be just the remedy you need! Get into a summer state of mind and indulge in this  Lemon Meringue Ice Cream Bar recipe to get you through this last stretch of winter.  

Here’s what you’ll need:

Crust Ingredients:
  • 20  Vanilla Creme Sandwich Cookies, crushed  (about 2 cups) 
  • 3 tablespoons butter melted 
  • Juice and zest from 1 lemon 
  • 4 1/2 – 5 cups Perry’s Lemon Meringue Pie Ice Cream, slightly softened 
Crumble Topping Ingredients:
  • 12 Vanilla Creme Sandwich Cookies crushed 
  • 1 1/2 tablespoons butter, softened 
  • Zest and juice from 1 lemon

Step 1: Prepare the crust

Start by preparing the bottom crust layer of your Lemon Meringue Pie Ice Cream Bars. Add the creme filled cookies into a bowl and crush into fine crumbs. Then, add in the melted butter, lemon juice, and lemon zest and mix until well combined. Press the mixture into the bottom of an 8×8 baking dish lined with parchment or wax paper and place it in the freezer to set for about 1 hour.

Step 2: Prepare the crumb topping

To prepare the topping, combine the ingredients for the crumble topping listed above (cookies, softened butter, and lemon juice and zest).  Mix gently with a fork or your hands to make pea-sized pieces that stick together. This mixture should be courser and chunkier than the crust! Set the topping aside in the fridge.  

Step 3: Assemble the ice cream bars

Now for the best ingredient: Perry’s Lemon Meringue Pie ice cream! After the crust has set for about an hour, scoop around 2 cups of ice cream and spread evenly over the cookie crust. Next, place the pan in the freezer for about 10-20 minutes to harden slightly. Once slightly hardened, remove the cookie crumble topping from the fridge and sprinkle evenly over the top of the bars.  

And now, we wait! Place your Lemon Meringue Pie ice cream bars in the freezer for 3-4 hours or overnight to allow the bars to fully form before serving.

Tip: Remove the ice cream from the freezer and let it sit for a few minutes to soften before spreading it onto the cookie crust to ensure an easier spread!  

Step 4: Serve and enjoy

Once the ice cream bars have hardened enough, remove them from the freezer and allow them to sit out for about 5-10 minutes so the crust softens slightly. Then, cut into rectangles or squares and store the bars in the freezer until ready to serve.
